The much-loved Dr Foster’s, located in the picturesque waterside setting of Gloucester Docks will re-open this July as a gastropub, with a fresh and re-imagined concept, which is being brought to life by A Rule of Tum. The acclaimed restaurant group is renowned for its delicious food and charming dining spaces, such as The Bookshop, Leaven Pizza, The Yard & The Burger Shop in Hereford, as well as Maneki Ramen in Worcester. The new Dr Foster will officially open its doors on Friday 12th July.
Dr Foster will embody the essence of a classic pub with a modern twist, with A Rule of Tum putting in the work to restore the historic Kimberley Warehouse to its former glory. Guests can expect a warm and welcoming atmosphere, perfect for enjoying anything from a casual beer, brunch and coffee, or a delicious meal. The versatile space includes a cosy bar, bright conservatory, and an upstairs restaurant area, catering to a wide range of dining preferences.
Dr Foster will offer a diverse menu with something for everyone. From beautiful brunch dishes such as Foster’s Baked Eggs with Yoghurt, Nduja Sausage Crumb, Dukkah, and Sourdough, to hearty evening meals like the classic Chicken, Thyme, and Leek Pie served with A Rule of Tum’s famous buttered mash potato, which caused a stir on social media last year with over two million people viewing the recipe. The pub also features dry-aged Hereford Heggie’s steaks, cooked over coal, and a selection of delicious, local beers & cocktails.
The menu will include a variety of vegetarian and vegan options, such as the Ogleshield and Onion pie, and the Coal-Roasted Harissa Aubergine with Pomegranate and Chimichurri. Gluten-free alternatives are also available on most of Dr Foster’s dishes.
In keeping with A Rule of Tum’s dedication to quality, ingredients for Dr Foster dishes will be sourced from local suppliers. The gastropub will serve beers and ciders from Deya Brewery, Wye Valley and Gloucester Brewery, with meats from Heggie’s Butcher in Hereford. Bread will come from Peter Cook’s Bread in Worcestershire, and fresh produce will be supplied locally.
Dr Foster will be in the safe hands of Executive Chef Callum McDonald, who has worked with a wide range of Michelin chefs across the country, before joining the A Rule of Tum team at The Bookshop in Hereford.
With a seating capacity of 90 in the bookable restaurant upstairs and 150 in the downstairs area, including an outdoor courtyard and dockside seating, Dr Foster will be equipped to accommodate both large groups and intimate gatherings.
To celebrate the opening, Dr Foster invites patrons to take part in the exclusive trial period from 4th – 7th July, in which diners can enjoy 50% of food if they follow the eatery on social media and subscribe to their mailing list.
